any feedback on the difference between rigor of AP statistics vs statistics ( for senior year at school) . Looking at the school catalog, AP stats seems to have a more well rounded set of topics and a course that is needed for non-science majors.

My daughter took regular stat at a good suburban high school. It was a big mistake. No rigor whatsoever. Take the AP stat.

It’s going to depend on the school, but I would certainly expect an AP course to cover more material and be more rigorous than a standard/core course.
Core/Honors/AP is a fairly standard rigor hierarchy.

AP statistics emulates a one semester non-calculus-based college statistics courses suitable for non-science majors needing a math or quantitative reasoning general education requirement. I.e. the material is not generally considered that difficult.
A non-AP high school statistics course that is less difficult than AP statistics seems like not really worth the schedule space for a strong student.

Look at @MYOS1634 post. If you haven’t finished your regular math sequence I would avoid high school Stats depending on your college goals. It is more of a fun and interesting course but colleges do not look at it as rigorous even the AP version. It is usually known as an easy A AP course. So it I know that then the college AOs definitely know that.

Areas of interest are Science and Economics/ Finance ( not decided on Major yet) . Completed AP Biology, Chemistry and currently doing AP Calculus AB ( doing OK but not planning to specialize in Math in college) . Short list of classes for senior year include 1) Physics ( to complete Science portfolio - debating between regular and honors) 2) AP Statistics 3) (AP) Government 4) (AP) Economics - both Government and Economics are offered in senior year at school) 5) AP Spanish ( completed requirements, enjoy learning the language) 6) English 7) Computer Science principles ( for a structured introduction to learn more about the field) . Course selection for senior year is coming up this week. Appreciate the inputs on this thread on not only Statistics but the feedback on AP vs non AP. Thank you.
Economics, finance, and all sciences generally require calculus and often require statistics (sometimes calculus-based statistics that is more advanced than AP statistics). Some of these fields (e.g. physics, or economics going on to the PhD level, or quantitative finance) require more advanced math than (single variable) calculus.

In that case, I would recommend AP Stats.
Honors or Regular Physics is up to you, but you show stronger quantitative skills (important for Economics/Finance and required for STEM) it may be best for you to take Honors if you can handle it.
The rest of your schedule is very well thought-out.
