are these enough?

I'm not sure if all of these are extracurricular but, here goes.

Clubs:
-Scenic crew (making sets for school musical)
-Spanish club
-Help the Hungry (cooking and serving food at soup kitchens)
-Math club

Work:
-Tutoring
-Instrumental lessons

Volunteer
-Teaching Korean school
-Community service programs overseas

I don't know what category to put this, but
I'm in charge of my church youth groups and
various activities that are hosted by the church.
(community service etc)

Please give your opinions, thanks!

All of those are ECs, but just be careful not to pick ECs JUST to pick ECs (which your title suggests could be a possibility); only participate if you're passionate about them.
That being said, if you'd like to enhance your ECs, try to get leadership positions in your clubs, or even start one based off of an interest you have. It's more important what you do with the ECs you're in than how many you're in.

I'm worried about not having leadership positions..
I'm passionate about community service specifically but
the leadership positions I have aren't in clubs at school.
Is that okay?

Try to get a leadership position at your community service location, maybe you can do community service at the zoo if you like animals a lot.

Does it matter whether it's a leadership position at a school or outside of school?
I keep thinking it has to be leadership position at school clubs...

Don't worry about if they are outside of school. If you are more passionate and involved in those types of activities, put them. If anything it shows that you utilize your networks in your community. And try thinking of interesting ways of wording your positions that you are a part of, it can make your last activity fit.
