UTD offers a BS in Healthcare Studies. Three questions: 1) is this major possibly designed so that you can maintain a high GPA to get into med school? 2) would medical schools like to see this major, or not? 3) is there any job you could actually get with this BS in the event you do not go to medical school?

In my opinion any major that ends in "studies’ is a watered down version of a real major.

Yep, but if it gets you a 4.0 GPA and the med schools don’t care what your BS is in, it sounds perfect.

Medical schools do sometimes care about major. While physical sciences, natural sciences, arts, and social sciences all do equivalently in the admissions process, the admissions rate is lower for “specialized health sciences” than for these four.

You should see if your undergraduate school (or this department, perhaps) tracks medical school applicants with this major and analyzes how they perform in admissions.
