I'm just curious because, while I have done a lot of unique things and haven't really participated in typical ECs--debate club, student government, FBLA, etc, I have done a ton of more unique activities without really ever focusing on one interest, because that's just the type of person I am. How are college adcoms going to look at that on my app?

I don't know. if doing a huge variety of stuff is what you like, then show the colleges that. I don't know if they would like to see that or not.

IMO, Colleges don't want you to be one of everything, but master of nothing. It's good that you're well-rounded. Colleges want people who are versatile, but if you're completely unfocused, and do a huge variety of activities, it's not good. You should have at least one main activity you've shown substantial focus on.

There are few people who are genuinely well rounded with deep interests and substantial accomplishments in several different areas, and colleges do like such applicants. What doesn't impress colleges are students who force themselves to dibble and dabble by being members of a variety of things in efforts to impress colleges.

My school doesn't offer many ECs, I find my hobbies outside of school.
How can I explain?

You don't need to explain about doing ECs outside of school. The colleges that care about ECs typically are more impressed by ECs one does away from school than ones that are in school because being involved in ECs away from school usually takes more effort and independence.
