Chances are, the person already has every exciting gizmo.
It highly depends on the recipient. For my husband, stuff made by Fluke is exciting. He has an iPhone and Bose earphones, and that is it. YMMV.
Yup, my H and S have bought all the ”exciting” electronics they wanted. It’s so much a matter of personal taste, if I purchased, I’d get it from a place like Costco that allows returns with no restocking fee.
As boring as it sounds, Apple AirPod Pros ($250) are very gratifying. The noise cancellation and transparency features work and they stop playing when you pull one out of your ear to talk to someone. The fidelity is not bad either. My son gave me a pair for Christmas last year. For over the ear headphones, the Sony WH-1000XM4 ($350) is excellent.

If any of them are engineers or computer programmers, a fun, nerdy electronic gift is a mechanical keyboard. We bought our son a Keychron K2 last year for Christmas and he uses it every day.
Apple Magsafe charger if he has a compatible iPhone or AirPods Pro. Not exciting but very practical.
If he listens to the radio at home, Tivoli clock radio. A few years ago, we stayed at a hotel that had this radio in the room. We were so impressed by the sound quality, we bought one.

If they are into music, Bang and Olufsen makes some amazing bluetooth speakers.
My sons favorite gift ever was a projector. He can take up an entire wall and split to 4 screens at one time, rarely ever missing a football or basketball game.
Projectors can run into the $thousands but we got him a lower end Epson and the picture quality is still great.we paid about $450 at the time.

@BunsenBurner thanks for sharing the NYT article. Though there was no way I was ordering the $19 Apple cloth, I did end up purchasing the MagicFiber microfiber cloths mentioned in the article. Stocking stuffers for my kids - I got a 13-pack for less than the price of one overpriced Apple cloth!

The JBL Flip 5 portable speaker is amazing. It’s well under $200.
