I’m able to find stats for SDSU on acceptance by major for first time freshman applying but am looking for something similar for the other CSUs. Fullerton, Long Beach, etc.
Majority of the CSU’s are not that transparent about their acceptance by major. Here are some links for the campuses I could find data.

Cal Poly SLO Target projections but no specific acceptance by major:

The actuals for Cal Poly for the prior year are in the center columns. What’s unknown though is yield by major.
CPP and SJSU provide more useful information than admission rates – they post prior year admission thresholds by major:

Note that while many majors at SJSU admitted frosh with recalculated HS GPA of 2.6, the computer science major threshold was equivalent to a 4.3 for an applicant without any of the bonus points (for local area, fee waiver, military or veteran, first generation to college).
