Can I boost my transfer (CC + UC) gpa with easy courses somewhat related to my major?

Long story short I went to UCSB straight from high school; did poorly there with a 2.1 gpa; dropped out and went to a CC; completed my prereqs and want to transfer to a CSU (CSULB) for another Stem major. My transfer GPA right now is poor (2.75) and I want to increase my chances of getting in so I’m looking into taking easy comp sci courses this fall at another CC. As you’re aware, those UC courses have been haunting me and I have no plans to spend a couple grand just to retake a few courses that I’ve already passed at a CC. I’ve already gone beyond 70-75 units altogether with my UC and CC courses so my only option is to just take more courses and pass them with As to raise my transfer gpa.

My question: is taking easy courses - that are somewhat related to your major - acceptable for raising your transfer gpa? I’ve read a few threads on these forums and most people seem to agree that you can take as many CC courses as you need to raise that gpa as long as they’re not transferable. My other question is how can I tell if a course is “UC/CSU transferable” other than looking the course up on the school catalog? And should I take easy courses that fall under the UC/CSU transferable umbrella but aren’t related to my major?

For 2018, the average CSU transfer GPA for CS/CPE was 3.32. 2019 data not yet posted. I would aim for at least a 3.0+ for any chance.
