Can you submit a recommendation letter after the deadline? (Transfer)

I am submitting my application around early to mid-February. I plan on applying to the Radio-Television-Film program.

I just got through my first day of my second semester at community college. I am taking COMM 1307 (one of the required courses for RTF) and I am pretty sure I have already made an impact on my professor. He graduated from the exact same program I plan on applying to (RTF at UT). I don't think I need to explain how big of a plus a letter from a professor who came from the same program I applied to would be to my application. Since it's still the first day it's far too soon for him to write a letter and by the deadline this will still likely be the case. I was wondering if I could possibly send in a letter after the deadline (assuming all my required materials are sent in on time) from this professor to supplement my application.

Also what would I need to do to actually send out a letter? I asked my history professor and he said he would more than happy to write a letter for me as long as I send an email with the required materials. What would there materials be? Do I ask him to just write a letter in a word document and send it to me?
