Your stats are good and your ECs are decent. Write great essays and you could get accepted to any of these schools
you’re 50/50 for the second tier UCs and a reach (say 15%) for UCB/UCLA. But all within reach.
One thing you may want to consider if it’s not too late is to bump up your number of AP classes for senior year. Especially if the only schools you are applying for are UCs and CSUs. They don’t look at your senior grades unless you’ve been accepted.
Have you taken your SAT II’s? Most of the schools recommends it, especially for your major. You should take Math II and Chemistry. You should do this very soon if you haven’t already.
i wouldn’t add any more APs Sr year. going to 4 or 5 from 3 wont have a significant impact on your admission chances and might be too much work to manage as you navigate college tours and aps, Sr ball and all the other distractions that are headed your way. A single poor grade Sr yr can have your acceptance pulled so, tread carefully.
There is a lot of subjectivity that goes into UC admissions and you are not out of the running for any of the ones you list but, i’d add UCSC and UCR to your ap list. SDSU,CP Pomona and CSULB would also be solid safety spots with solid programs.

If all of the application stuff and college visits are taken care of over the summer, time should not be an issue.
I hate it when people make blanket statements about whether a course load is too difficult or not. If my kid listened to his GC he would probably be at SJSU now instead of at Berkeley. Turning up the rigor is absolutely a key way of improving chances to get into UCB and UCLA. As long as the OP isn’t going to get a D in any class, which is extremely unlikely given her past record. Also, UCs and CSUs don’t care about your senior grades unless you are admitted. That’s why the reward is greater than the risk.
An AO from Berkeley told parents at my kid’s HS 2 years ago that the expectation for Engineering and presumably STEM majors is to take a minimum of 8 AP classes, assuming that the full suite of AP classes are offered.
