I think your odds are pretty good depending on what you choose to major in. There is no such thing as pre-med at UT. You choose any major and then complete the required medical school pre-requisites. You should explore the link below.

UT is never a safety for OOS students so definitely have a Plan B.
Also, UT does not meet full need and gives very little merit aid. You should strongly consider staying in state for undergraduate and saving your money and borrowing capacity for medical school.
Your GPA, Class Rank, etc… are just fine, so no need to worry about that.
The extra curriculars is what I am concerned with. It seems like practically everything you did was for 1-2 years. UT is really big on seeing people do things for all 4 years, and grow throughout that club/organization, and then become a leader in that club/organization, not just be in it for 1-2 years and have a 1 year executive position. That being said things like Foreign Language Club, JOOI club, or volunteering at a library are a waste of time in your app, it will probably hurt you more by having that. FBLA, Speech and Debate, and South Side Servers would all be great, if they were done for a longer period of time. But to any reasonable admissions counselor, it would seem like you simply joined to put it on your app.
Finally, I see that there is nothing that you have done that is tiered towards your potential major (pre-med) You plan on doing a bunch of stuff, but you really havent done much in regards to your major. UT doesnt care if you are planning on doing stuff or you did things for a couple months or a year, they want to see that you did things longterm.
