Hello, this is my first time on CC and I am just here to look for some opinions on what schools I should apply for and my chances for these schools.

You are a competitive applicant for all the schools on your list.
I will only comment on the California schools.
Stanford/Cal Tech are Reaches for every applicant but are definitely in the running but EC’s are a bit lacking.
UCLA/UCB/Harvey Mudd although considered Reach schools due to low acceptance rate you have an excellent chance.
UCSD/Cal Poly SLO look like Match schools.
As long as your parents are willing to pay full fees, you are good for the UC’s and Cal Poly.

Note that the UC’s and CSU’s give no financial aid to OOS students.
The family is moving to California soon, which is why I included more of those schools
To get in-state tuition you need to be here in California 365 days prior to entering a UC as a Freshman, so if you are moving within the next few weeks to months, you will not make this cutoff. Most likely you will be paying OOS tuition your first year before you can establish residency.

If I go to UT, would I lose residency for tuition in Texas when we move? That was another large factor for including more California public schools.
You need to check Texas’s residency requirements. In California, if you graduate from a CA High school and then your family moves just before and during your time at a CA public university, you still retain your CA residency. Each state is different so you need to find out what Texas’s policy is on in-state tuition.
