Chances at Cornell, Vanderbilt, Rice, etc.?

Hi, I’m currently a junior and I was wondering whether my provisional list of schools is comprised of sensible options for me considering my student profile. Any help is welcomed. Thanks!

Test scores & GPA:
-ACT: 35 (35 on all sections except a 33 on math)
-SAT: 1480 Superscored (690 EBRW, 790 M)
-SAT Essay: 20 (7 Reading, 5 Analysis, 8 Writing)
-SAT Subject Tests: I’m registered to take French, Chem, and Math 2 in May, and I plan to take Spanish this fall
-PSAT: 1410 (730 EBRW, 680 M); I know the PSAT isn’t important in many cases, but I included it anyways.
-AP Tests: two 5’s so far (AP Human and AP World); I’m taking APUSH, AP Chem, and AP French in May and expect one 4 and two 5’s or three 5’s
-GPA: around 5.3 weighted; 3.8 unweighted (I believe)
-School: My school is extremely competitive, and my counselor has told me I’m in the top 20% of my class.
-Senior workload: AP Gov, APES, AP Stats, AP Psychology, either Honors or AP Econ, Honors English, Honors Photography, AP Spanish Lang exam (but no class)

Extracurriculars: This is probably my weakest spot, and I think it’ll definitely bring me down.
-Clubs: Photography Club (4 yrs), French Honor Society (2.5 yrs), National Art Honor Society (2.5 yrs), Model UN (2 yrs), Rho Kappa (1.5 yrs). I’m planning on applying for an officer position in FHS and Rho Kappa. The duration of time reflects how much time I will have spent in each club after the end of my senior year.
-Awards: I have gone to a statewide French competition each year since Freshman year. I consistently got first place in both individual and group events, and my school got first place overall this year. I also got two gold medals in the National French Exam.
-I participated in a summer immersion program to learn Spanish in Spain last summer, and i subsequently got a pretty good scholarship for another, more prestigious program this summer.
-I was index editor for a semester during sophomore year in my school’s yearbook.

Community Service:
-I have garnered over 600 service hours from foster care. I’m afraid colleges might look down upon this as the stereotype of foster care is that it’s easy work for a lot of hours. However, foster care can definitely be a demanding task, especially when you are to care for several animals at once or puppies/kittens without a mom to feed them. In many cases, animals that I have fostered have gotten sick, prompting us to go to the vet.

Essays & Recommendations (Predictions):
-Essays: Though I haven’t begun writing them, my essays will probably be one of the stronger points of my applications. I’d say that writing is a strong point of mine, and I feel like I have many interesting topics to write about (my endeavors in being a foster parent, my mom’s job as a self-employed fashion designer and how that has affected me, my step-family’s being from Thailand, my immigration status that has led me to have an affinity for geography, politics, and languages…)
-Counselor recommendation: My counselor and I as well as she and my mom have a great relationship. She has had both of my brothers before, and we like to bring her croissants at every meeting
-Teacher recommendation 1 (French teacher): I’ve had her for three years now, and she has helped me in shaping my outlook on the world as a French speaker and member of the French culture.
-Teacher recommendation 2 (Chemistry teacher): I’ve had her for two years, and, while my grades are definitely not the best, she is the reason I no longer vehemently dislike science.

Other:
-Race: white male
-State: Florida (If I apply to an in-state college, it would be UF)
-Immigration status: first-gen immigrant & permanent resident; will (hopefully) become a citizen during my first fall term at college.
-Intended major: IR or Political science with a minor in either a language (Spanish, Arabic, Chinese… I don’t really know yet) or in biochemistry (though I need to do more research on it)

Schools I’m thinking about:

-King’s College London

-Cornell
-Vanderbilt
-WashU
-Rice
-Emory

-BU
-Northeastern
