Chances for NYU University of St. Andrew's University of Edinburgh? Ill chance back!

Hi everybody!
IF YOU COULD PLEASE CHANCE ME THAT WOULD BE AWESOME!!! (I'll chance back if I know anything about your schools)

So I want to apply to NYU Stern School of Business, University of St. Andrew's (Scotland) and University of Edinburgh (Scotland) and would want to major either in Business Studies or Economics

Here's about me:

GPA: 3.5 UM/ 4.35 W
ACT: 33
APs: 7 (European History, Calculus AB, English Composition, English Language, Chemistry, Psychology, Statistics) and al of them I've gotten either 4s or 5s

ECs:
Tennis - 1 year
Volleyball - 4 years (and club, which is outside of school)
Basketball - 1 year
Track & Field - 2 years
Leader of school's cancer awareness club
Peer tutor (through school)
Started a "Junior Board" and a local home/charity for mentally disabled adults

So I was just wondering what my chance were of these schools?! Also, I know that St. Andrew's and Edinburgh are rolling admissions, so does that mean that it would be okay if I applied after, say, January 15th? (I'm only asking because my semester doesn't end until then and I want to include my 1st semester senior grades). Would my chances decrease if I applied that late?

NYU, low match.
