I applied to SAS and the School of Environmental and Biological Sciences, but the one I'm really aiming for is the School of Engineering. I have a 3.65 GPA, and an 1840 SAT score (CR=590, M=620, W=630).

I already know my chances are low, but what's keeping my hopes up is the fact that my grades improved from freshman year to junior year. Freshman year, I got a 3.1 (88-91%) for Algebra I. Sophomore year, I took Geometry I Honors and Algebra II Honors, and got 3.0s (88-91%). Junior year, I took Pre-Calc Honors and got a 3.6 (92-96%). As of now, I'm taking AP Calc AB (my school doesn't offer BC). Sadly, I only realized I liked math after sophomore year. Would Rutgers SOE notice that my math grades improved, or do they only care about my GPA?

Would my extracurricular activities, volunteer work, and leadership positions improve my chances of getting in? For sports, I play varsity volleyball. I'm part of the math club, technology assistance program, asian interests club, student organization for animals' rights, Link Crew (welcoming committee for freshmen), and NHS. I volunteered at a science museum in my city for 180+ hours, and for leadership positions, I'm secretary for both the student organization of animals' rights and NHS.

Also, would it be okay for me to consider SAS and the School of Environmental and Biological Sciences as safety schools with my GPA and SAT score?

SAS and SEBS are safety schools for you and I think you have a pretty good chance for SOE. It might take them a little longer to accept you since they want to see the applicant pool, but hang in there. You will hear from SAS and SEBS first and SOE later. Good luck!

i got accepted to the SAS, SEBS, and SOE the day after they received my application.
I have a 3.4 gpa (not that great) 1880 sat and also a lot of EC’s and other things like that. I have also only taken only one honors class and only one AP class (chemistry)

since my sat is only slightly higher than yours, you have more higher level classes and a somewhat significantly higher gpa, i feel like you should get in, but you wont be sure til they notify you

Think you should be fine… we have similar stats, I’m out of state and was admitted to SAS, SEBS, and SOB two days after they said they would begin reviewing my app.
