So I got my second choice FWS and frankly, even though second choice sounds fun, I really wanted my first choice. Do y'all think it is likely that I wlll be able to switch FWS? Do many people even drop their FWS for another one? Would it be annoying or weird to email the professor of my first-choice FWS that even though I didn't get her in the FWS lottery I would like to switch into her class from my current FWS if possible?

You can try and e-mail to see if the prof will open up a spot, but I wouldn’t bet on it. If you drop your current FWS, then you will only be able to add one with open spots, and usually those are some of the more unappealing ones.

Assuming the policy hasn’t changed since I have been a freshman (only 3.5 years ago), professors cannot increase the cap for FWS. I have been in classes where they have tried. Cornell is very strict on the ratio for these. You might get in, but I wouldn’t count on it. These aren’t classes people generally drop frequently because they are required for graduation.
