I was accepted to Drexel as a Chemistry major at the College of Arts and Sciences, but I now realize that what I'd rather be doing is Chemical Engineering, which is a major at the Engineering school. Is it possible to make that switch if I choose to attend?

Yes, it should be possible. In order to switch schools, you have to get a 3.0 or higher GPA, and you have to show interest toward the other major (AKA, take classes in it). Contact your advisor and let him/her know that you want to change your major, and they should be able to get you into engineering classes.
