After I submitted all my applications my teacher persuaded me to take AP Physics C: Mechanics (taking AP exams are optional for us at school). I was not confident before and I just decided I might as well go for it because physics comes easily to me and hey who knows? I might do well.
Anyways, I think all my schools have downloaded my CA already so it makes no sense to update it on the CA. Rather, I was thinking I should contact each college I’ve applied to/gotten deferred to and tell them I am taking AP Physics C: Mechanics. Is that a good idea/ will it even help my application?

So are you actually taking the class? Or just the exam? You probably should email your rep and give this information if you are also now taking the class, but I am not sure it will help your app. If you are taking the class, it will appear in your final transcripts, and they might then wonder why you didn’t list it. If you are only taking the test, I am less certain there is a point in telling them, as it might seem very contrived. The benefit will be if you get a good score that can be used for credit or placement, assuming your college accepts the AP for those purposes. If you get a low score and you are only taking the exam,that won’t look so good. Of course, by that time, you will have your accpetances, and I doubt a school will do anything like rescind your offer if you don’t score well on the test. The importance here is really about if you are actually taking the class.
Assuming that you are currently taking the class, and the question is if you should now report that you are planning on taking the AP test, then, no, it will not help. No you do not need to report the change to college. Reporting AP scores/planned tests is entirely optional.
