Percentage wise, what is the acceptance rate for the Chicago College of Performing Arts?
Depends upon the major and the year, just like any school.
According to US News, Fall 2014 acceptance rate was 76.2%

Again, CCPA’s is different from Roosevelt’s.
Jazz Studies, Classical Performance, and Orchestral Studies for fall 2016? or any recent year?
If you want specific or detailed data, I would just call the school’s admission’s office and ask. All admissions offices have the numbers, some give it out freely, some are reticent.
Keep in mind that even if you get an acceptance rate number, it may be essentially useless because things vary so much from instrument to instrument and studio to studio each year. You may be able to find out approximately how many spots will be open for your instrument in the coming fall, but some schools may not want to say. The number of spots available depends on how many professors there are and how many people in the studio are graduating. You play tenor sax, right? Usually there is just one prof for jazz sax and one for classical sax, even at large public U’s, and some schools just have one prof for both and some schools only have a jazz program. On the classical sax side, anyway, most studios will have 5 or fewer spots available in a given year. One professor will typically have a studio of 15-22 students including grad students. We have been looking at studio web sites (when they exist) and counting the number in the studio and the number of seniors graduating in 2017 to get a rough idea. When the numbers are that low, they often will only accept the exact number they can take and then go to the wait list if any of those spots are declined.
