So next year I have the option of taking either AP Euro, which I heard colleges love (dunno if that’s true), or this class my school offers called Health Careers that is super oriented with healthcare and medicine, awesome since I want to be a doctor right? Well I know that colleges really like AP but I’m already doing IB and I just need help deciding if I should do the class I love or the class that a college would love to see in addition to my IB diploma? I only have a bit of time to decide so help as soon as possible would be much appreciated!
You should look at the graduation requirements for the major you want to complete in college. AP classes give you college credit so you can take one less boring required class in college. If you’ve taken other AP history classes already then you probably don’t need another AP history class if you’re going to be a doctor.

Colleges will look at the “Healthcare” class like they do Culinary Arts or Shop, a practical elective. It could be useful for you to see what in the Healthcare field interests you. It doesn’t carry the same weight or rigor as an AP class, obviously, so the answer to your question would depend on the two questions above.
Agree with MYOS. Health career classes don’t help with med school. Or admissions to a highly competitive undergrad college. They aren’t cores. At your hs, what sort of kids take HC? What range? At many, it includes kids looking for a vocation, as opposed to a profession.
