Classes: AP Sciences vs Medical vs Genuine Interests

I'm a sophomore planning to go into the medical field through a regular college (not an Ivy or anything.) I'm actually genuinely interested in all of the sciences and medical classes, but my school's block scheduling (4 classes a semester) won't allow me to take all of the classes I'd like to in the next two years.
What do you think colleges prefer, the AP sciences overload? Do you think medical classes are really important? I've heard colleges prefer interests over APs that aren't essential; however I'm planning to take two APs in each core subject--2 x 4 + 1(Human Geo; freshman year) = 9 total.

Junior year
IB Spanish/Chemistry (yearlong; A/B Day)
AP English Language and Composition/US History (yearlong; A/B Day)
Calculus Honors and AP Calculus (yearlong; first and second semester)
Two elective slots
Most Likely: Bio 2 Honors and Medical Terminology

Senior Year

IB Spanish/Chemistry (yearlong; A/B Day)
AP English Literature/European History (yearlong; A/B Day)
AP Statistics
Three elective slots
Most likely: Gerontology, AP Bio

AP Bio, AP Chem, AP Physics: At my school, most AP sophomores take Bio 2 Honors (first sem only) and then AP Bio (second sem only) yearlong; this is what a majority of my peers are doing. Ap Chem is the same process. Only Physics Honors is offered. Many IB Chem students choose to pay to take the AP Chem exam, which is probably what I'll do.

Medical classes: Medical Terminology is a dual credit class with college credit offered; it's easy and completely on the computer with little to no teacher instruction. Health Science 3 is considered a back-up if Gerontology doesn't fit in your schedule. Gerontology is two credits; it lasts first and second block and sounds AMAZING. It's almost like A/B Day; every other day is spent like a job at the hospital (report early and lasts for the two blocks) while the other days are spent learning hands-on skills in the classroom. You get your CNA and First Aid. However; the likeliness of being able to fit it in with yearlong AP or IB classes is very low, since they'll probably be offered at the same time. Anatomy and Physiology is offered CP, not honors. Emergency Medical Services is also offered. Any of these classes sound amazing.

Genuine Interests: The only other elective I'd love to take is Chinese 1 (no honors offered), just for fun. I'm Vietnamese and know that language; I love Spanish (Spanish IB is the absolute best Spanish program at our school; there's no AP Spanish, only Spanish 4) and Chinese would be extremely interesting as it's nearly impossible to self-study accurately.
