Hampshire, Bennington, and you might also look into Bard and Goucher. Maybe check out the Colleges that Change Lives book/website-- it has a lot of LACs many of which are not super selective.

Ithaca College, midsized, not too selective, in a very New Age, hippie friendly town. Offers a BA in Environmental Studies and BS in Environmental Science.

Thanks for the recs, everybody! We needed some “safety” schools there were less selective on the list. We can now investigate a few more schools.
