I was wondering if there are schools that have good music ensembles for non-majors that are also good physics schools as well. I’ve had only some luck on my search.
Do you mean, chamber music ensembles? What are your stats and what can your parents afford?
Yes, Lawrence University would be a good example. It has a excellent undergraduate physics program and the choirs are open to anyone(if you are good enough).

University of Rochester. Yes, they have Eastman for the music majors, but their main campus has a ton of music options for pretty much everyone - and oodles of students use them. The school seems to attract those who love music and science. We went to a few of their concerts over the years and were impressed - esp loving their acapella groups personally.
Harvey Mudd? As part of the Claremont Consortium the students have access to lots of music opportunities both for credit and just for fun.
St Olaf choral program is amazing and it is very common for non-majors to be in the choirs. Physics and math departments are very good and active with research ops (summer and during the year), clubs, study-abroad major-specific programs, etc.
