Confused about LSP Course Registration...

I feel really stupid, but I have to admit I'm having some problems.

I'm hoping I could get into Gallatin after my 2 years at LSP. So I'm registering for Social Foundations I, Cultural Foundations I, and Writing I, which are course requirements for the fall semester. It also says that I have to have 7 electives, which means 4 classes per semester (is that a lot or normal?). What are considered electives? Are we only restricted to LSP classes? Because I would love to take a class like Intro to Sociology or something related to Psychology (I want to have concentrations in Business or Econ & Psychology in Gallatin), but they are CAS classes. It also says that I should take a math or science class - would Econ be considered a math class?

My daughter will be in LSP this fall. She did her registration on Monday. We found it a little odd that you were able to register before even having any contact with an academic adviser. She chose a writing elective in LSP (potential English major), but I believe that you can choose CAS electives as well.
