Cooking when you’re Staying home

H and D20 are cooking tonight ?. Shepherd’s pie with leftover roast beef from last night and green salad.

Was planning to have baked potatoes that people could top how they’d like - steamed broccoli, tzatziki, sour cream, cheese, carne adovada (leftover from last night) - but when I pulled out the potatoes to wash them, I found they’d been in there a little too long and were looking pretty sad. Looks like we’ll repeat last night’s dinner - street tacos.

Italian sausage subs w/ onions and peppers (always smells so good when cooking) and leftover pesto pasta from previous night.

My MIL’s funeral was yesterday and we had pizza. Unlike normal times Covid shiva is via Zoom so our home is not sinking under the weight of baked goods, nor are we swimming in deli platters. I think I should cook tonight but to be honest my brain is not in meal planning mode. I will peruse this wonderful thread for ideas and be back to contributing soon.

Getting takeout pizza tonight. It’ll be the first time we’ve had restaurant food since 3/13. We’re both looking forward to not having to cook.

Sometimes pizza is just what’s needed IMHO. Even leftover. Sometimes leftover is even better! I’m sorry for your loss, @runnersmom, what a tough thing to go through right now.

I bought a package of French green beans at Costco and now I actually need to prepare them. They are not my favorite, but I felt the need to try something new. Anyone have any suggestions? I think I have shallots at home, so I was going to try this: https://cooking.nytimes.com/recipes/11356-french-green-beans-and-shallots - unless you all have any better ideas.

I also have a package of chicken breasts, so that will be the meal. Not too exciting, but I need to use up the perishables taking up refrigerator space.

We were on vacation right before this all started, so I was really spoiled with eating at some great restaurants. I think now I’d be happy to go to McDonald’s. Just to go out.

Green beans are my favorite—I make them just like your recipe. I will often add a diced and cooked potato and sautee it with the shallots and green beans. I use EVOO when I add the potato.

We were going to have an impossible burger tonight… but I couldn’t find it in the fridge anywhere. It was part of last week’s big shopping. But then I checked the receipt… and apparently it didnt make it onto the conveyor belt to be paid for. Wonder where it went…

Oh well. We have om hamburger we bought form aq vendor that usually sells to high end restaurants. Its coming out of the freezer for tonight.

Ordered takeout pizza last night for dinner. Only my second take out since early May. Tonight will be port tenderloin chunks in cider-cream sauce over brown rice. Side of steamed spinach.

On Thursday I’m having friend over for a socially distanced outdoor luncheon. Green salad w/ a maple vinaigrette. Mushroom-gruyere tart (mushrooms and onions for the tart both homegrown). White wine. And whatever my friend brings for desert.

Tonight I am working with a Costco substitute where I forgot to mark “no substitutes”. I had wanted bbq pulled pork but got pork carnitas. Working with and using some of the farmers box veggies. Also strawberries were overflowing the boxes this week so a berry crisp for desert.
