Covering Old SAT scores to new SAT scores

I got a 700 on the English (37 W,33 R and 6,6,7 on the essay) yet when I converted this score on the SAT converter app it said my CR would only be 610. So, Is a 700 on English for the New SAT not comparable to a 700 for CR on the old SAT??

Correct. Not comparable because 700 on the new English combines R and W whereas 700 on the old CR is strictly R.

Your English 700 is high because the W is high.

And overall, the scores are inflated.

It seems like there is inflation. Do you think colleges know this? Should I aim higher than 700 to be competitive?

I’m pretty sure the colleges are (or will be) aware of the inflation, especially since the Washington Post ran a major story on it today.
