I really like Computer Science, but I also want to go to med school. Would a CS + Premed course load be practical/possible?

Yes. Emory’s CS isn’t so intense that it hinders completion of pre-med coursework (unlike say, many engineering schools). As mentioned in another thread, I’ve had CS major friends that were able to complete the program in 3 years (the on time finish at Emory for the Tech 3-2 program) while majoring in music for example. Not to mention, it offers you a good training so that it is easier for you to attempt some of the more interesting coursework in the biology department that most pre-meds will not (like computational neuroscience, physical biology; On top of this, NBB stats type courses become jokes to an extent). Basically, if you want to take more courses than normal that may expose you to biological (or even chemical) concepts, a CS or math background can be hugely beneficial. Sounds good to me. You have to understand that most majors at Emory are “pre-professional friendly”. They also are double major friendly.
