I won’t be seeing a penny from either of my parents, so I’m worried about this being detrimental to my application. Also, since neither of them can legally claim me on their taxes anyway, would it be an issue if I only reported one parent?

I would suggest calling the financial aid office and clarifying IF parent info is needed for a 28 year old veteran…it’s not for FAFSA.
The school will tell you if it’s required for them…on the Profile.
Agree that this is college dependent. A college may define “independent for financial aid purposes” differently from the FAFSA definition or other colleges.
Do you have some FAFSA only school options as well?
this is a college issue. Each school gets to decide what they need to disburse their own funds.
If OP a returning students? Many schools have processes in place where if you start as a dependent student, you finish as a dependent student even if you have life events that make you indpendent.
Some schools require students show 5 years of self sufficiency in addition to age in order to be considered independent
