So, I may be wrong, but it seems like all the Physical Sciences Core sequences seem to say "PQ: MATH 10600, or placement in MATH 13100 or higher." What if I plan on merely taking (or testing out of) Elementary Statistics? And I know I'm not placing into Math 13100...

Everybody takes a math placement test during O-Week. 13100 is one of the easier courses to place into (it’s what I placed into, and heaven knows I’m not good at math). If you don’t place into 13100, the math required for some of the physical sciences classes might be pretty tough for you. This is a bridge you have to cross when you come to it, though.

Read the catalog carefully, OP. If you don’t place into 13100 or higher, you can’t take Elementary Statistics. Even if you get a 4 or higher on the Statistics AP, it’s pretty clear that you won’t be able to use that credit to meet the core if you haven’t qualified for 131000 (either by the placement test or by completing 10600). If you really aren’t solid enough in pre-calculus to qualify for 13100 (and I don’t think you have to be all that solid to qualify for 13100), you will have to take 10500-10600 first, then whatever math and phy-sci courses you are using to meet the core requirements.
