Do lots of people write about this in their essay? I can imagine why they would if they'd experienced it as it's often a life changing event. But would it maybe be seen as an obvious choice of topic.. almost like a cop out?

I think any essay topic CAN be done well, but most already have been. Death of a relative is a topic that while personally devastating, is not that "fresh" or unique of a topic for a admissions reader. I would suggest something else that is more descriptive of you. But, in the end write whatever you feel most passionate about, it's your essay.

At the risk of sounding caustic/insensitive, most people use death to play on readers' sympathy. However, there are a few essays that genuinely display a legitimate sensitivity through the loss of a loved one. This type of essay is far and few in between. It's just better, and generally advised, to avoid depressing topics at the risk of seeming like you are trying to milk the unfortunate event.
