Do non-scientific clubs help to enhance one's resume for med school? I mean something like being head (or founder) of a photography club or a VP of a religious soceity club in your college?

If you contribute a lot to an activity, and consistently spend time doing it, it will (to my understanding) be looked at positively by med school adcoms.

But don't do something just because you want to look good to med schools.

As someone who believes he got in largely b/c of outstanding involvement/leadership experiences (combined with superior MCAT scores) I think it can make a big difference.

However, like I usually say, involvement is all about how you sell it. If you can make your interviewer believe that you'll be a better doctor b/c of your time in Club X, it doesn't matter if you failed miserably at your goals or you ran unopposed for the position, or if the position was entirely unrelated to medicine.

As I've started on my third year, I've come to realize the importance of being a likable individual more so than ever. Just being nice can get you a decent distance with most people. Medicine is a people profession for the most part, and if you can't deal with people, you should consider something else.
