Do colleges care where you do Extracurriculars?

I go to a REALLY small private school that doesn't have many options when it comes to extracurriculars. I'm interested in pursuing engineering but the only program they have that has anything to do with that is Science Olympiad (which I did sign up for btw). Colleges won't care if I , for example, find a club/program/whatever outside of school and join while it was available in school right? Like theres no difference for them?

Bonus Question: What type of volunteering should I do if I want to pursue engineering?

Your volunteering should be something that you care about and something that you enjoy.

The colleges won’t really care where you do your EC’s, but they like to see evidence of commitment - like a year or more doing something rather than a whole bunch of short-term activities. They also like to see student involvement from freshman year on, rather than a “hey, it’s my junior year so I’d better get those EC’s started”.

There is no special eca for particular major.Just do what you are interested in.What matters is your passion.

It has some good posts about ecas and others.

Whether ECs even matter depends on what colleges you apply to.

As @ucbalumnus says, extracurricular activities matter more or less depending on which school you apply to. However, for some special scholarships, the selection committees like to see more than just being in a club, but some leadership qualities in what you have done. It does not matter exactly what or where though.

Specifically for engineering, it always helps to show that you have a specific passion for the subject and that you know what it involves.

Ivys care a lot but if you’re going to state schools not as much. But it doesn’t hurt to have good EC’s no matter where you’re applying.
