Next year I am planning to apply early action to several schools, and I was just wondering if they whether they would see what courses I am taking second semester senior year or whether they would just see what I am taking first semester.

Many applications will ask for your schedule list senior year. This will be the classes you plan on taking each semester. And they will of course get your final transcripts after you graduate. Many schools say that you can be rescinded if the list of classes you took it is significantly different from what you planned on taking. In fact some schools, such as the UC schools, require you to notify them immediately of any changes. So if this is a backdoor way of asking if you can get accepted early and then skate the second semester, the answer is generally no.
