Especially music theory

All the schools my kid visited, LACs etc, said the first thing they do is re-caculate the gpa to pull out non-academic subjects and to unweight everything so they can see straight up academic grades.

Sure, As in electives will boost class rank, but schools look at academic performance.

Some schools considered only the 4 (or 5) core subjects in GPA calculation. Some would skip freshmen grades too. I don’t think Ivy league schools have an unified policy on this. You should look up each school to see if and how they recalculate GPA.

Maybe Music Theory (specially if it’s an AP), but probably not Band and Health.
