Does it matter which Science you take?

I'm currently a sophomore, and took the Bio SAT earlier this year (750). But, I've been reading up a little, and a lot of the schools say that if you are applying to engineering, they would "prefer/expect" you to take SAT Math and Physics/Chem. (UCLA says applicants are strongly encouraged to take a science test that is closely related to the applicant's major)

Well, I don't really know what I want to major in yet, but CS and other majors not really related to Bio are a possibility. My question is, does it really matter? I plan to get 750+ on SAT Math2, and I'm really annoyed that I might have to take yet another science SAT (blah).

If the colleges say that they prefer/expect you to take a certain SAT II, that is a strong indication that you should take that SAT II. It might be a drag, but if you are likely to apply under an engineering major, you should probably be decent at Chem/Physics. I would plan to take the test...your 750 Bio score will still be looked at and appreciated.
