Does it really matter what SAT IIs you take?

I mean, should I take a wide variety of SAT IIs (i.e. math, science, history) or should I stick to what I’m good at (2 maths and 1 science). The colleges I am applying to require the Math Level 2, one science, and one of my choice. For a while, I was considering the U.S. History SAT II, but since I am much better at math, should I just go for the Math Level 1? Does a college me as a better canidate if I take a history SAT II instead of a math/science? Also, if it helps, I did make a 4 on the U.S. History AP.

Check the colleges you intend to apply to closely as to what is required. Often, colleges that require two or three SAT II's require them to be in "different subjects" and thus the college would count math Ic and math IIc as meeting the requirement for only one of the SAT IIs. Moreover, some colleges will not even accept the math Ic (all the UC's). In any event, it is likely to look somewhat better if the third II is not another math and if you were able to get a 4 AP in history, you have the ability, with prep, to do well on the history SAT II.

Personally, I find math tests less demanding than other tests. I can finish almost any math test in half the allotted time. Of the colleges I am applying to, the only required tests are Math Level 2 and a science of my choice. The third test can be any from the remaining. Either way, would it look better to a college to see 750+ in three math/science tests or 750+ in two math/science tests and 600+ in a history one?
