Hi, I will be applying to college soon, and I am taking community college courses in the maths and sciences, which is what I want to study in college. Does taking these classes count as extracurricular activities?

No, it will be another transcript that you have to send the college along with your high school transcript. This is a “curricular” activity – classes – not an “extracurricular” activity outside of classes.
