I'm going to be attending UCLA starting next fall (hopefully - unless I get rescinded or something), and my declared major would be MIMG. I was thinking about double majoring, with the 2nd major being chemistry, or doing just the MIMG major along with 2 minors, one of them being biomedical research and the other a more "fun"one (like English or Film and Television).
What do you think would be a better idea:double major, one major and 2 minors, or just a major and a minor?
Also, how many classes do I have to take in general to fulfill a major's requirements? and how many for a minor?

You should go to UCLA’s site and then the specific departments you are interested in…there should be very detailed requirements for majors and minors, and sometimes even a four year suggested plan. See if two majors fit together…sometimes a very rigorous major precludes a second major - sometimes they fall together nicely and even overlap.
