I plan on attending U of I next year, and I've been admitted as a journalism major. Is there any way I could double major in another field, such as economics, business, etc. Also, how much of the journalism program is focused on just journalism, and how much of it is just basic liberal arts?

Economics possible, business no. The business college does not accept persons trying to double major from other colleges. Economics is in LAS college which allows double majors (which you would do if first major is in LAS) and double degree candidates (which you would do if trying to achieve two majors from different colleges, which would be the case if seeking an LAS major as a journalism major which is in the college of media). Whether you can seek such a second major is something usually determined toward end of sophomore for junior year. You would need to apply for acceptance into LAS and economics and there is no guarantee you would be accepted but chances would be good if grades are high (above 3.0 GPA) and you have completed necessary courses that freshman and sophomores usually take for the second major. As to course requirements for journalism major go here: http://provost.illinois.edu/ProgramsOfStudy/2013/fall/programs/undergrad/media/journalism.html

As to reality, be aware that there are many who come to UIUC with the plan to double major and usually by sophomore year they have come to their senses and decide completing one major is difficult enough. That is true even more so when doing the double degree program, seeking a second major in a different college, because that requires completing at least thirty more semester hours (a usual one year schedule with 15 hours each semester) than the total hours required for your a degree in your first major, I.e., if you need 120 semester hours for a degree in the first major, you will need at least 150 to also get a degree in the second major in a different college.
