Dropping a class?

I've found myself in yet another dilemma with my guidance counselor. We don't necessarily get along too well, and I had an appointment today to talk with her about this conflict--

My english teacher this first semester was amazing, and I feel like I learned more than ever. We also became close, and I thought she could possibly write my letter of rec for college, also because she is writing one for my summer pre-college program. So, I went to my counselor to switch into the english class she is teaching next semester, really so I could have her for the full year and the letter could be that much more genuine.

It would have worked out fine if my counselor allowed me to drop my photo class. The problem with this is I am planning on applying to Tisch NYU for photo & imaging, so obviously they would want to see I took photo in school. However, I tried to explain to my counselor that I've taken photo since sophomore year, the same class in fact, and this year (junior year), instead of the school class, I went to the International Center of Photography in NYC to take classes there. I said that it would be obvious on my resume, when I listed this, that I did continue photo through junior year. She thinks it would show my "inconsistency" and I would likely not be accepted. However, she's not an art teacher, artist, or anything of the kind, and I personally feel like it wouldn't be that big of a deal.

So, drop my photo class and risk coming off as "inconsistent" or not "driven" enough? Or, enjoy a second semester of english with my teacher and get a great recommendation.

Things to note:

-I'm likely doing pre-college at Tisch, which I think shows a great deal of devotion
-I commute every week to NYC just to go to photo classes
-I actively participate in photo competitions

I don't think continuing a school class would show how I was not serious about photo.

Thanks for reading and your input on this would be very much appreciated.
