So my HS junior son's tutor says just to take U.S. History in the spring, and not the Math. He's done Bio (690) and Chem (710), and history and math are his best subjects. If schools look at 3 of the SAT IIs, shouldn't he take both? Plus I would think a humanities, a math and a science score would look much better than a humanities and two decent science scores.

I would think it depends on what your student is planning to major in. I would push for the Math II over US History, but only if he is strong in Math. Maybe the tutor sees something that makes him worry about the math score?

It depends on his intended major and schools he is going to apply. If he wants to do science or engineering major, taking Math2 is highly recommended. It is also one of the more generous subject test in score. Secondly, it is more economic and cost efficient to take more than one subject test at a time. Most schools just need 2 SAT2 scores if required. He should consider to take those he has more strength on them if there is no preference by the school. The additional ones are not really helpful particularly if they are not very high.

Do both, if he performs well on the material. He’ll probably to better than on the science tests.
