I know most programs have requirements (like for some programs you need to be the undergrad at the university for which you are applying to medical school for; also, Mount Sinai requires you to be a Humanities/Social Science Major), but I was wondering if anyone can provide me with a list of programs which allow college students to be accepted early or allow college students to be admitted without the MCAT. This is not just a ploy to not take the MCAT, it's just another option I want to make sure I look at to maximize my chances at medical school. Thanks a lot.

Check the MSAR book, there you will find what you are looking for.

link to that?

You have to buy the MSAR - I think its around $20. Basically a thing put out by the AAMC that lists a bunch of statistics for each school like GPA, MCAT (averages and spread), percent of admits with research, volunteerism, etc. Can be found at any college bookstore, and probably most regular bookstores like Borders as well.
