Most people consider the "easiest" AP's to self study for are:
AP Psychology
AP Statistics
AP Micro/Macroeconomics
AP Comparative Government
AP Human Geography
AP Environmental Science

The History AP's are challenging in the sense that its memorizing dates and facts. So if you really enjoy history it might not be a bad idea.

If your taking AP U.S. history or have taken it I recommend self-studying for AP U.S. Government and Politics because they do have similarites.

What classes are you taking junior year? If your schedule is very rigorious then you should be careful not to slack off.

I am self-studying four AP's this year and have a fairly challenging schedule but I am not too worried because most of the AP's are easy self-study AP's.

yeah after taking some of those classes self study seems possible.

The ones I felt that could easily be self-studyed

AP Macro
AP comparative Government

I took AP mirco as a class, you probably need to take it as a class in order to do well on the AP test and be able to learn Macro econ by your self because alot of stuff overlaps in those courses.

im taking calc ab, phys c, lang., ush (all aps), latin 3, bball, and thats it
but yeah i do wanna self study something. im thinking gov., psychoogy or macro/or micro

I self studied chemistry with the Brown/Lemay textbook and the PR prep book and escaped with a five, though it wasn't a very easy venture, but if you have the time then it's definitely possible.
