what are some of the easiest satIIs to take

subjective

If you're Chinese and can read/write Chinese, the Chinese.

Otherwise, Math I is easy but there's no point in taking it. It's also not that hard to get an 800 in Math II. 10% of the people get an 800.

But keep in mind that a high score on a test where a high score corresponds to a higher percentile (i.e. 800 : 99%) will probably look better than one where a high score does not correspond to a very high percentile.

It also depends on what subjects you are strong in. For me, World History was pretty easy because I like history.

It depends.

I thought chemistry was pretty easy, but I took it after a year in AP class.

I personally thought math 1 was kind of hard...

Usually if you're a native speaker, then those native language tests should be easy.

You should take the subjects that are easier for you. I know the curve for Math II is pretty generous.

What about ones that are easiest with little or no background in the subject? I've heard history is pretty much just a case of learning the stuff, whereas with something like a science or language you have to not only learn it but understand it. If that makes sense.

It all depends on what your strengths are. I thought World History was pretty easy after taking the AP exam, but a lot of my friends thought it was hard. Chemistry was pretty easy, I read through the Princeton Review book the night before (which is the worst review book for chem out there, but the shortest), and got a 780. Math 2 has a generous curve.
