Any insight into when masters/Phd programs release their acceptance decisions? Do they generally happen around the same time as undergrad? The process is different I know?

Too broad! release dates can differ by subject, degree and university. That said:
Within a university Masters & PhD decisions release independently of each other, and typically on different schedules.
Across universities, Masters offers (in the subjects for which I have experience) roll out over a period of a few weeks, while PhD decisions roll out over many weeks, even months. In other words, you could get your first PhD decision weeks before your last one.
