I'm a junior in college at Cal State Fullerton (in Orange County) studying Communications - Entertainment and Tourism studies. I also have minors in Film and Theatre. I am looking for a graduate program that will capstone the plethora of knowledge I have and give me the two more years I would like before I hit the job market. What kinds of programs are out there that are media related (not journalism or digital media)?

Hi dslazzle. What type of work in media are you in interested in? There are a number of producer's programs out there in the graduate level - specifically at USC (Peter Stark), UCLA, Chapman and the American Film Institute. These schools also have graduate work in filmmaking, screenwriting and the like if that's more your style. Boston University has a television management program and Carnegie Mellon University has a relatively new program for a master's in entertainment industry management that offers 1 year of study in Pittsburgh and 1 year in LA. There might be a couple of other programs out there but the ones I listed are the ones I looked into and/or have applied to. Good luck!
