I'm currently on track to be an engineering major, but I am considering switching to an environmental studies major and an engineering minor-- but I'm also wondering if this would get me anywhere and/or if it would be practical.

It depends on what tier your school falls into. If its a great school, then yes, the enviro studies probably will be good. If its not such a great school, it probably wouldnt be able to compare with the engineering major.

Usually its easier to get a job from a "okay" college with an engineering degree than other degrees. At least that's been my perception.

Also, it really depends on what you want to do. Are you interested in the policies and regualtions of the enviroment, or do you want to solve problems that relate to the enviroment? First case -- enviro studies, second case engineering. I dont think that a minor in engineering will do much for you with regard to work opportunities.
