Extra Semester for an Econ Minor?

Hello everyone, I'm currently on track to graduate by the summer with a BA in applied mathematics. After looking through a lot of jobs in this field, I noticed that a lot of them require or recommend experience/knowledge of economics and finance. I was wondering if it would be worth it to take just one more semester to finish an economics minor. Would the extra trouble make my degree much more marketable in this industry? Affording the extra semester wouldn't be much trouble since I am charged instate tuition and receive a generous amount of aid from grants. What do you all think?

Thanks for the help!

quick addition: my gpa right now for math classes isn’t too great (<3.00), so taking the extra semester could give me a good gpa in economics and boost my cumulative as well.
