So, this year I'd like to take some AP's to help ease my load in college. So far I have:

5 - Chem
5 - Calc AB
5 - Stats
5 - English Language
4 - English Lit
3 - Computer Science A

Now, for this year, I'd like to take the following:

AP Literature (again; since I took it cold w/o prep or the class)

AP Calculus BC (logical step past AB)

AP Physics B (I'm in honors physics 1 &2 this year, so I'd like to self-study the AP material)

AP Psychology (I want to self study this just because I like psychology)

AP Computer Science AB

AP Biology ('cause i'm in the class)

Is this feasible if I dedicate enough effort to it? Could I '5' them all? Any textbook recs would be appreciated :)

It's feasible to do it. I did 8 AP Exams last year (4 regular classes, 2 half-year classes, and 2 self-studies). You are setting yourself up for dissapointment if you expect them to be all 5's, though... expect a few 4's.

As for textbooks, I hear cliff notes for AP Bio is God.

It'll be easy for you.
Lit can't really be last-minuted prep'd
BC is easy
Physics B might be hard
Bio is easy
Psych is easy
AB should be easy since you already had A

yeah.

I'm taking 7.. one self-studied, 6 from classes and they're all much nastier, trust me. You'll be okay.
