If I am getting interviewed for a college, is it smart to say that this college is my "first choice", even if it isn't really? That is, I have a few colleges that are up there for TOP choices, but I don't have a clear FIRST choice. Is it okay then, to just say that this college is my #1 to better my chances of a scholarship or whatnot?

Well, you don't specifically have to state "#1", it may sound phony. Plus, the question "but if it's your first choice, why didn't you apply early here?" may arise (ya, happened to me last year).
It would be better if after telling the interviewer why you applied there, he could deduce for himself what # choice it is.

If he asked me why I didn't apply early, I would just say I didn't have my SAT scores in on time or something. Plus, being from a poor school and first-generation, I didn't even know there was such thing as ED before I found CC. Just what I would say, or what you could say if these descriptions fit you.

You could use finanical aid (assuming you applied) as a reason for not applying ED.

that's a little dirty. just give a great, excited explanation of your reasons for applying
