Future AP plans

I'm a sophomore now and I'm starting to realize how important my school work is. I had pretty terrible grades as a freshman and now I've pulled my grades up a little and I'm taking AP Bio and AP World this year. In order to be competitive I want some suggestions on what courses i should take as a junior and senior.

Sure AP's for next year and ones I've already done
AP US
AP Chem
AP English Lang
AP Bio
AP World
AP English lit

Ones I'm considering
AP Spanish Lang
AP Japanese (Independent Study)
AP Gov (can only take as a senior)
AP Psych
AP Enviromental
AP Human Geography

I really love languages and hope to make studying them a part of my future and I have an interest in psychology too the rest are mostly because I hope my GPA which will most likely be rather low (90% this year something like 87% for my high school career) wont limit my college choices. I don't think there's any way I could do ALL of these which ones are the most interesting and which are the hardest to do? Are there any other exams that any of you think might fit?

Oh I can get by in conversational Japanese but I'm nowhere near fluent though in my school its an option to take two or three study halls to work on it.
I am however fairly fluent in Spanish

My school doesn’t offer AP Euro though I like history and I cold probably self study it, but math is my main weakness and I think a class like AP Calc would seriously hurt my already rather low GPA. Same for Physics lots of math involved that I don’t feel totally comfortable with. Though I could take some of it over the summer and see how i like it.

English Lang and Lit might be easy and self study able but i have to take them as classes in school for the credits. And for the languages I’ll definitely go up to Spanish 4 but i could take it AP instead and I’m not sure if that’s a good decision
